Equipment

  • 4 ramekins to layer and steam the dish

Ingredients
  

  • 1 lb ground chicken
  • 1 cup green or napa cabbage chopped
  • 3 green onions finely sliced
  • 1 tbsp fresh ginger minced
  • 2 cloves garlic minced
  • 6 mushrooms finely chopped
  • ½ tsp baking soda optional for fluffier texture
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar or Shaoxing grape juice
  • 2 tbsp oyster sauce
  • ¼ cup low sodium soy sauce
  • 1 package wonton or dumpling wrappers
  • Additional green onions for garnish
  • Chili oil for garnish

Instructions
 

  • In a large mixing bowl, combine ground chicken, chopped cabbage, sliced green onions, minced ginger, minced garlic, chopped mushrooms, sesame oil, rice vinegar, oyster sauce, soy sauce, and baking soda if using; mix well.
  • Prepare ramekins by spooning a layer of the filling into the bottom.
  • Place a wonton wrapper over the filling, then continue layering filling and wrappers alternately until the ramekin is nearly full.
  • Pour about one-third cup of water into each ramekin, then top with two wonton wrappers to seal.
  • Place the ramekins in a Dutch oven with water halfway up their sides.
  • Cover and steam for 20 minutes until fully cooked.
  • Serve warm, garnished with chili oil and additional sliced green onions.

Notes

  • Use baking soda for a lighter texture.
  • Substitute oyster sauce with vegetarian alternative if desired.
  • Store leftovers refrigerated up to 2 days.
  • Steam gently to avoid overcooking wrappers.
