- 1 lb ground chicken
- 1 cup green or napa cabbage chopped
- 3 green onions finely sliced
- 1 tbsp fresh ginger minced
- 2 cloves garlic minced
- 6 mushrooms finely chopped
- ½ tsp baking soda optional for fluffier texture
- 2 tbsp sesame oil
- 2 tbsp rice vinegar or Shaoxing grape juice
- 2 tbsp oyster sauce
- ¼ cup low sodium soy sauce
- 1 package wonton or dumpling wrappers
- Additional green onions for garnish
- Chili oil for garnish
In a large mixing bowl, combine ground chicken, chopped cabbage, sliced green onions, minced ginger, minced garlic, chopped mushrooms, sesame oil, rice vinegar, oyster sauce, soy sauce, and baking soda if using; mix well.
Prepare ramekins by spooning a layer of the filling into the bottom.
Place a wonton wrapper over the filling, then continue layering filling and wrappers alternately until the ramekin is nearly full.
Pour about one-third cup of water into each ramekin, then top with two wonton wrappers to seal.
Place the ramekins in a Dutch oven with water halfway up their sides.
Cover and steam for 20 minutes until fully cooked.
Serve warm, garnished with chili oil and additional sliced green onions.
