Equipment

  • 1 oven preheated to 350ºF
  • 1 skillet for cooking beef
  • 1 mixing bowl for combining cheese and dressing

Ingredients
  

  • 1 lb lean ground beef
  • 1 oz taco seasoning packet
  • 1 can 10 oz diced tomatoes and green chiles, undrained
  • 2 cups shredded cheddar cheese preferably aged
  • 8 oz bottle Ranch dressing
  • 5 packs frozen phyllo tart shells 15 shells per pack

Instructions
 

  • Preheat the oven to 350ºF.
  • Brown the ground beef in a skillet until fully cooked; drain excess fat.
  • Add taco seasoning and the can of diced tomatoes with green chiles to the beef. Stir to combine and simmer for 5 minutes.
  • In a mixing bowl, combine shredded cheddar cheese and Ranch dressing.
  • Mix the cheese and Ranch dressing mixture with the cooked taco meat.
  • Spoon the taco mixture into the frozen phyllo tart shells. Freeze if preparing ahead.
  • Bake the filled tarts for 8-10 minutes, or 10-13 minutes if baking from frozen, until heated through.

Notes

  • Use lean beef to reduce fat content.
  • For a spicier bite, add hot sauce to the taco meat mixture.
  • Freeze assembled tarts for up to 1 month and bake directly from frozen.
