Ingredients
  

  • 2 cups mashed sweet potatoes
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts
  • 1 tablespoon maple syrup optional
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • Combine mashed sweet potatoes, cottage cheese, rolled oats, cinnamon, vanilla extract, walnuts, maple syrup if using, and salt in a large bowl until well mixed.
  • Spread the mixture evenly in the prepared baking dish.
  • Bake for 30 to 35 minutes until the top is set and golden brown.
