1 strawberry corer or sharp paring knife
1 food syringe or squirt bottle optional but helpful
1 tray or dish for chilling
- 3 oz strawberry jello mix 1 box
- 1 cup boiling water
- 1/4 cup cold water
- 1/4 cup fresh squeezed lime juice
- 1/2 cup white rum
- 40 large whole strawberries
- granulated sugar for garnish
- lime wedges for garnish
Whisk the strawberry jello mix with 1 cup boiling water in a medium bowl or measuring cup until dissolved with no granules.
Stir in cold water, fresh lime juice, and white rum until evenly combined.
Remove stems and hollow out each strawberry using a corer or paring knife to create a cavity, then trim the bottom for stability.
Fill each hollowed strawberry with the jello mixture carefully using a food syringe, squirt bottle, or steady hand.
Place filled strawberries upright on a tray and refrigerate for 2 to 3 hours until the jello sets completely.
Before serving, roll the top of each strawberry in granulated sugar and garnish with a lime wedge. Serve chilled.
- For a stronger alcohol flavor, increase rum to 3/4 cup and omit cold water.
