Ingredients
  

  • 2 packs instant ramen noodles discard seasoning packets if making broth
  • 6 oz jalapeno sausage casing removed or sliced
  • 4 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 large eggs
  • 1 tbsp cooking oil for frying eggs
  • 2 green onions sliced (for garnish)
  • Optional: chili oil sesame seeds, fresh cilantro (for garnish)

Instructions
 

  • Brown the jalapeno sausage in a medium saucepan over medium-high heat, breaking it apart if bulk; cook 5-7 minutes until browned and cooked through. Drain excess fat, leaving 1 tablespoon.
  • Add chicken or vegetable broth, soy sauce, and sesame oil to the pot. Stir and bring to a simmer.
  • Add ramen noodles to simmering broth and cook 2-3 minutes until tender but firm.
  • Meanwhile, heat 1 tablespoon cooking oil in a non-stick skillet over medium heat. Fry eggs until whites are set and edges crisp, yolks runny, about 2-3 minutes. Season with salt and pepper.
  • Divide noodles and broth evenly between two bowls. Top each with half the cooked sausage.
  • Place one fried egg on each bowl. Garnish with sliced green onions and optional toppings. Serve immediately.

Notes

  • Try different sausage types or add quick-cooking vegetables like spinach or mushrooms.
  • A dash of rice vinegar brightens the broth flavor.
  • Store leftovers refrigerated and reheat gently.
