- 6 oz jalapeno sausage casing removed or sliced
- 4 cups chicken or vegetable broth
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 large eggs
- 1 tbsp cooking oil for frying eggs
- 2 green onions sliced (for garnish)

Brown the jalapeno sausage in a medium saucepan over medium-high heat, breaking it apart if bulk; cook 5-7 minutes until browned and cooked through. Drain excess fat, leaving 1 tablespoon.
Add chicken or vegetable broth, soy sauce, and sesame oil to the pot. Stir and bring to a simmer.
Add ramen noodles to simmering broth and cook 2-3 minutes until tender but firm.
Meanwhile, heat 1 tablespoon cooking oil in a non-stick skillet over medium heat. Fry eggs until whites are set and edges crisp, yolks runny, about 2-3 minutes. Season with salt and pepper.
Divide noodles and broth evenly between two bowls. Top each with half the cooked sausage.
