Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp chipotle peppers in adobo sauce minced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime cut into wedges

Instructions
 

  • In a bowl, combine shrimp with olive oil, minced chipotle peppers, garlic powder, cumin, and salt.
  • Heat a pan over medium-high heat and cook shrimp for 2 to 3 minutes per side until pink and opaque.
  • Warm the corn tortillas in a dry pan or microwave until pliable.
  • Assemble tacos by filling tortillas with cooked shrimp, shredded cabbage, diced tomatoes, and chopped cilantro.
  • Serve tacos with lime wedges on the side for squeezing over.

Notes

  • Adjust chipotle peppers to control the heat level.
  • Flour tortillas are a good substitute if corn tortillas are unavailable.
  • Top with avocado slices or crema for extra creaminess.
