Ingredients
  

  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 8 slices thick bread brioche or challah
  • 1 cup chocolate chips
  • 1/2 cup graham cracker crumbs
  • 1/2 cup mini marshmallows
  • Butter for grilling

Instructions
 

  • In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and a pinch of salt until smooth.
  • Cut bread slices into quarters to help with soaking.
  • Dip each bread piece into the egg mixture, coating both sides without oversaturating; let excess drip off.
  • Heat a non-stick skillet or griddle over medium heat and melt butter to grease the surface.
  • Place soaked bread pieces in the skillet and cook for 2-3 minutes per side until golden brown and cooked through.
  • Immediately layer chocolate chips and mini marshmallows between two pieces of French toast to form sandwiches.
  • Return sandwiches to the skillet and cook for 1-2 minutes per side until chocolate melts and marshmallows become gooey.
  • Transfer to plates, cut in half if desired, and serve warm with optional powdered sugar or syrup.

Notes

  • For extra flavor, add peanut butter or Nutella between layers.
  • Store leftovers in an airtight container in the refrigerator.
  • Serve with fresh fruit or whipped cream for added indulgence.
