- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Pinch of salt
- 8 slices thick bread brioche or challah
- 1 cup chocolate chips
- 1/2 cup graham cracker crumbs
- 1/2 cup mini marshmallows
- Butter for grilling
In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and a pinch of salt until smooth.
Cut bread slices into quarters to help with soaking.
Dip each bread piece into the egg mixture, coating both sides without oversaturating; let excess drip off.
Heat a non-stick skillet or griddle over medium heat and melt butter to grease the surface.
Place soaked bread pieces in the skillet and cook for 2-3 minutes per side until golden brown and cooked through.
Immediately layer chocolate chips and mini marshmallows between two pieces of French toast to form sandwiches.
Return sandwiches to the skillet and cook for 1-2 minutes per side until chocolate melts and marshmallows become gooey.
Transfer to plates, cut in half if desired, and serve warm with optional powdered sugar or syrup.
