Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 2 cups penne pasta
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes canned or fresh
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Place chicken breasts in the bottom of the slow cooker and season with salt, pepper, garlic powder, and Italian seasoning.
  • In a mixing bowl, combine cream of chicken soup with chicken broth until smooth, then pour over the chicken.
  • Add diced tomatoes and penne pasta on top, stirring gently to submerge the pasta in the liquid.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is fully cooked and tender.
  • Remove chicken breasts and shred with two forks, then return shredded chicken to the slow cooker.
  • Stir in shredded cheddar and mozzarella cheese until melted and creamy; adjust seasoning if needed.
  • Serve hot garnished with chopped fresh parsley.

  • Recipe can be doubled for larger groups.
