- 1 pound boneless skinless chicken breasts
- 2 cups penne pasta
- 1 can 10.5 oz cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup diced tomatoes canned or fresh
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Place chicken breasts in the bottom of the slow cooker and season with salt, pepper, garlic powder, and Italian seasoning.
In a mixing bowl, combine cream of chicken soup with chicken broth until smooth, then pour over the chicken.
Add diced tomatoes and penne pasta on top, stirring gently to submerge the pasta in the liquid.
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is fully cooked and tender.
Remove chicken breasts and shred with two forks, then return shredded chicken to the slow cooker.
Stir in shredded cheddar and mozzarella cheese until melted and creamy; adjust seasoning if needed.
Serve hot garnished with chopped fresh parsley.
