Equipment

  • 1 oven preheated to 450 degrees F
  • 1 baking sheet for roasting cabbage wedges
  • 1 brush to apply olive oil

Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • ½ head green cabbage cut into 4 wedges
  • 1 pinch garlic powder or to taste
  • 1 pinch red pepper flakes or to taste
  • salt and ground black pepper to taste
  • 2 lemons halved

Instructions
 

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Brush both sides of each cabbage wedge with olive oil.
  • Sprinkle garlic powder, red pepper flakes, salt, and black pepper over each wedge.
  • Arrange the cabbage wedges on a baking sheet.
  • Roast in the oven for 15 minutes.
  • Flip the cabbage wedges and continue roasting for about 15 more minutes until browned and charred in spots.
  • Remove from oven, squeeze lemon juice over each wedge, and serve immediately.

Notes

  • Keep the core attached to the cabbage wedges to help them hold together while roasting.
  • Adjust seasoning to taste, adding more garlic or pepper flakes if desired.
  • Leftovers can be reheated or enjoyed cold in salads.
