Ingredients
  

  • 2 ripe mangoes peeled, pitted, and thinly sliced
  • 1 small red onion thinly sliced
  • 1 small cucumber thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh cilantro leaves chopped
  • 1/4 cup fresh mint leaves chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Peel and thinly slice the mangoes; thinly slice the red onion, cucumber, and red bell pepper; halve the cherry tomatoes.
  • In a small bowl, whisk together lime juice, honey, olive oil, salt, and black pepper until smooth.
  • Combine the sliced mango, onion, cucumber, bell pepper, and tomatoes in a large salad bowl.
  • Add chopped cilantro and mint leaves to the salad bowl.
  • Pour the lime dressing over the salad and gently toss to coat all ingredients.
  • Chill the salad in the refrigerator for at least 15 minutes to enhance flavors.
  • Serve chilled as a refreshing side dish or a light main course.
