- 1 cup creamy peanut butter 250 g
- 1 cup granulated sugar 200 g
- 1 large egg
- 1 tsp vanilla extract 5 ml
- 3/4 cup semi-sweet chocolate chips 135 g
- 18 peanut butter chocolate chip cookies
- 9 squares dark chocolate
- 9 large marshmallows
Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a stand mixer bowl, combine peanut butter, sugar, egg, and vanilla extract. Mix until fully blended.
Fold in the chocolate chips gently to distribute evenly.
Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheet with 1-inch (2.5 cm) gaps.
Flatten each ball slightly and bake for 10 minutes until cookie edges are golden.
Allow cookies to cool completely before assembling the s’mores.
Place nine cookies upside down and top each with a square of dark chocolate.
Toast marshmallows until golden brown and place one marshmallow on each chocolate square.
Cover each with a second cookie and gently press to form a sandwich.
