Ingredients
  

  • 1 cup creamy peanut butter 250 g
  • 1 cup granulated sugar 200 g
  • 1 large egg
  • 1 tsp vanilla extract 5 ml
  • 3/4 cup semi-sweet chocolate chips 135 g
  • 18 peanut butter chocolate chip cookies
  • 9 squares dark chocolate
  • 9 large marshmallows

Instructions
 

  • Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a stand mixer bowl, combine peanut butter, sugar, egg, and vanilla extract. Mix until fully blended.
  • Fold in the chocolate chips gently to distribute evenly.
  • Scoop tablespoon-sized portions of dough, roll into balls, and place on the baking sheet with 1-inch (2.5 cm) gaps.
  • Flatten each ball slightly and bake for 10 minutes until cookie edges are golden.
  • Allow cookies to cool completely before assembling the s’mores.
  • Place nine cookies upside down and top each with a square of dark chocolate.
  • Toast marshmallows until golden brown and place one marshmallow on each chocolate square.
  • Cover each with a second cookie and gently press to form a sandwich.

Notes

  • Ensure cookies are fully cooled before assembly to prevent chocolate melting.
  • Use chunky peanut butter for added texture and flavor.
  • Store leftovers in an airtight container for up to 2 days.
