Ingredients
  

  • 4 cups fresh spinach and mixed greens
  • 2 ripe peaches sliced
  • 3/4 cup fresh raspberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds toasted
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Rinse and thoroughly dry spinach and mixed greens, then spread evenly in a large serving bowl.
  • Arrange peach slices evenly over the greens.
  • Gently scatter raspberries throughout the salad for vibrant color.
  • Sprinkle crumbled feta cheese and toasted almond slices over the salad.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until emulsified.
  • Taste the dressing and adjust seasoning if needed.
  • Drizzle dressing lightly over the salad just before serving and toss gently or serve layered.

Notes

  • Toast almonds in a dry pan 2–3 minutes until golden.
  • Use slightly firm peaches for neat slices.
  • Serve immediately after dressing to keep greens crisp.
