- 1 pound large shrimp peeled and deveined
- 1 tablespoon olive oil
- 1 onion chopped
- 1 green bell pepper chopped
- 2 celery stalks chopped
- 3 cloves garlic minced
- 1 can 14.5 ounces diced tomatoes, undrained
- 1 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce adjust to taste
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper optional
- Salt and pepper to taste
- 2 cups cooked rice
- 2 green onions sliced for garnish
- Fresh parsley chopped for garnish
Heat olive oil in a large pot over medium heat until shimmering.
Sauté onion, bell pepper, celery, and garlic until softened, about 5 minutes.
Add diced tomatoes, chicken broth, Worcestershire sauce, hot sauce, oregano, paprika, cayenne, salt, and pepper; bring to a gentle simmer.
Stir in shrimp and cook until pink and cooked through, about 2 to 3 minutes.
Mix in cooked rice and stir until well combined and heated through.
Serve hot garnished with sliced green onions and chopped parsley.
