Ingredients
  

  • 1 red onion thinly sliced
  • 4 tomatoes chopped into bite-sized pieces
  • ½ cup olive oil
  • cup white wine vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 2 tablespoons chopped fresh basil
  • Fresh parsley for garnish
  • Fresh ground pepper to taste

Instructions
 

  • In a small bowl, whisk together olive oil, white wine vinegar, sugar, salt, and chopped basil.
  • Place sliced red onions and chopped tomatoes into a mixing bowl.
  • Pour the oil and vinegar mixture over the onions and tomatoes and toss gently to coat.
  • Cover and refrigerate the salad for at least 4 hours to marinate and develop flavors.
  • Before serving, garnish with fresh chopped parsley and season with fresh ground pepper to taste.

Notes

  • Great make-ahead salad using fresh summer tomatoes.
  • Feta cheese can be added for extra flavor.
  • Serve chilled for best taste.
