Ingredients
  

  • 4 chicken thighs bone-in and skin-on
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups mixed vegetables carrots, bell peppers, and zucchini
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, combine maple syrup, olive oil, dried thyme, garlic powder, salt, and pepper.
  • Place chicken thighs in a baking dish and brush the maple glaze evenly over them.
  • In another bowl, toss mixed vegetables with balsamic vinegar, salt, and pepper.
  • Arrange the vegetables around the chicken in the baking dish.
  • Bake for 35 to 40 minutes until chicken is fully cooked and vegetables are tender.
  • Remove from oven and let rest for 5 minutes before serving.

  • Marinate chicken thighs ahead for richer flavor.
