- 4 large russet potatoes peeled and diced
- 1 cup cooked turkey bacon crumbled
- 2 cups Colby cheese shredded
- 1 cup heavy whipping cream
- 3 tablespoons butter
- 1 teaspoon olive oil
- 1/4 cup all-purpose flour
- 1/2 cup yellow onion diced
- 6 cups chicken broth
- 1 10 ounce can cream of chicken soup
- 1 cup sour cream
- 1/2 cup green onion diced
Melt butter with olive oil in a large pot over medium-high heat. Add diced onions and sauté until translucent, about 3 to 4 minutes.
Reduce heat to low. Sprinkle in flour and stir constantly for 2 to 3 minutes to create a roux.
