Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 2 tablespoons neutral oil
  • 1/2 teaspoon cinnamon optional
  • 1 pound lean ground beef 90% lean preferred
  • 2 tablespoons taco seasoning
  • 1 tablespoon tomato paste
  • 2 cups cottage cheese
  • 2 avocados cubed or sliced (optional)
  • 4 tablespoons hot honey or to taste
  • Salt and pepper to taste

Instructions
 

  • Toss the cubed sweet potatoes with oil, salt, pepper, and cinnamon if using.
  • Arrange sweet potatoes in a single layer in the air fryer basket.
  • Air fry at 400°F (200°C) for 10 to 15 minutes, shaking halfway through, until golden and tender.
  • While sweet potatoes cook, heat a large skillet over medium-high heat.
  • Add ground beef and break it apart while browning.
  • Stir in tomato paste and taco seasoning, cooking until beef is fully browned and cooked through, about 6 to 8 minutes.
  • Divide roasted sweet potatoes and seasoned beef evenly among four bowls.
  • Top each bowl with cottage cheese and optional avocado.
  • Drizzle generously with hot honey and serve immediately.

Notes

  • Do not overcrowd the air fryer basket for crispy potatoes.
  • Substitute ground turkey or chicken for a lighter protein.
  • Omit avocado for fewer calories.
