Ingredients
  

  • 2 cups whole wheat flour
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 2 teaspoons ground cumin
  • 3/4 teaspoon active dry yeast
  • 1 teaspoon ground black pepper
  • 2 cups room temperature water
  • 1 1/2 cups Monterrey Jack or cheddar cheese shredded
  • 1 4 ounce can green chilis, with juice

Instructions
 

  • Mix whole wheat flour, all-purpose flour, salt, cumin, yeast, and black pepper in a medium bowl.
  • Add water and the green chilis with their juice, stirring for about one minute until combined.
  • Cover bowl with plastic wrap and let dough rest at room temperature for 10 to 18 hours.
  • Preheat oven to 475°F and place the dutch oven inside for 30 to 45 minutes to heat.
  • Generously flour a work surface and shape the dough gently into a ball.
  • Place dough on a piece of parchment paper.
  • Carefully transfer dough with parchment into the hot dutch oven, cover with lid, and bake for 30 minutes.
  • Remove lid and bake an additional 10 to 15 minutes until crust is golden brown.
  • Lift bread out of dutch oven using parchment paper and allow to cool on a rack for at least 30 minutes before slicing.

Notes

  • Choose mild or hot green chilis depending on your heat preference.
  • Let bread cool completely before slicing to ensure proper texture.
  • Store leftover bread wrapped at room temperature up to 2 days or freeze for longer storage.
