Equipment

  • 1 skillet for cooking chicken and cheese lace
  • 1 non-stick skillet for melting cheese to make cheese lace
  • 1 bowl for mixing chicken with seasoning

Ingredients
  

  • 1 pound ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 8 small tortillas
  • 1 cup shredded mozzarella or Jack cheese
  • 1/2 cup chopped dill pickles
  • 2 tablespoons pickle brine
  • 1 cup shredded cabbage
  • 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon

Instructions
 

  • In a bowl, combine ground chicken with garlic powder, paprika, salt, and black pepper.
  • Cook the seasoned chicken mixture in a skillet over medium heat until fully cooked.
  • Warm the tortillas in a separate pan over medium heat.
  • Prepare the cheese lace by melting shredded cheese in a non-stick skillet until it turns crispy.
  • Assemble tacos by layering cooked chicken, chopped dill pickles, and shredded cabbage on each tortilla.
  • Top each taco with the blended cottage cheese mixture and drizzle with pickle brine.

Notes

  • Adjust seasoning according to taste preference.
  • Use any preferred cheese variety for cheese lace.
  • Serve with extra dill pickles on the side.
