- 1 pound gnocchi
- 1 pound lean ground beef
- salt and pepper to taste
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 tablespoon yellow mustard
- 1 large white onion diced
- 4 teaspoons minced garlic
- 1 10 oz can diced tomatoes with green chiles
- 1 cup beef broth
- a scant 1/3 cup heavy cream
- 1 1/2 cups shredded sharp cheddar cheese divided
- 1 bunch green onions washed and thinly sliced
Melt butter in a large skillet over medium heat and toast gnocchi until lightly golden, then set aside.
In the same skillet, cook ground beef and diced onion until browned, seasoning with salt, pepper, cumin, smoked paprika, mustard, and garlic.
Add diced tomatoes with green chiles, beef broth, and toasted gnocchi to the skillet; bring to a boil, then simmer for 5 to 7 minutes until gnocchi is tender.
Remove skillet from heat and stir in cream and three-quarters of the cheddar cheese until melted.
Top with remaining cheese and broil until golden brown.
Serve garnished with sliced green onions.
