Equipment

Ingredients
  

  • 1 tablespoon butter
  • 1 pound gnocchi
  • 1 pound lean ground beef
  • salt and pepper to taste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon yellow mustard
  • 1 large white onion diced
  • 4 teaspoons minced garlic
  • 1 10 oz can diced tomatoes with green chiles
  • 1 cup beef broth
  • a scant 1/3 cup heavy cream
  • 1 1/2 cups shredded sharp cheddar cheese divided
  • 1 bunch green onions washed and thinly sliced

Instructions
 

  • Melt butter in a large skillet over medium heat and toast gnocchi until lightly golden, then set aside.
  • In the same skillet, cook ground beef and diced onion until browned, seasoning with salt, pepper, cumin, smoked paprika, mustard, and garlic.
  • Add diced tomatoes with green chiles, beef broth, and toasted gnocchi to the skillet; bring to a boil, then simmer for 5 to 7 minutes until gnocchi is tender.
  • Remove skillet from heat and stir in cream and three-quarters of the cheddar cheese until melted.
  • Top with remaining cheese and broil until golden brown.
  • Serve garnished with sliced green onions.

Notes

  • For extra veggies, add bell peppers or spinach.
  • Store leftovers covered in the fridge up to 3 days.
  • Reheat gently to preserve creaminess.
