1 medium saucepan for melting butter and marshmallows
1 mixer bowl for mixing cereal and peanut butter mixture
1 muffin tin lined with paper liners
1 microwave-safe bowl for melting chocolate chips
- 1/2 cup unsalted butter 115 g
- 1 cup mini marshmallows 50 g
- 1 cup creamy peanut butter 250 g
- 1/2 teaspoon vanilla extract optional
- 3 cups Rice Krispies cereal 75 g
- 1 cup chocolate chips 175 g
- Pinch of sea salt optional
Melt the butter and mini marshmallows together in a medium saucepan over low heat, stirring constantly until smooth.
Remove from heat, then stir in the creamy peanut butter and vanilla extract until fully blended.
Pour the Rice Krispies cereal into a large bowl and fold in the peanut butter mixture until each piece is coated evenly.
Line a muffin tin with paper liners, then spoon the mixture into each cup and gently press to flatten.
Melt chocolate chips in a microwave-safe bowl in 20-second increments, stirring until smooth.
Spread the melted chocolate over each cup and sprinkle with sea salt if desired.
Allow the cups to set at room temperature for 20 minutes or refrigerate to speed up setting, then remove liners before serving.
