- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp dried oregano
- 2 cloves garlic minced
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 cucumber grated and squeezed dry
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic minced
- 1 tbsp fresh dill chopped
- Salt and pepper to taste
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1/4 cup red onion thinly sliced
- 1/2 cup kalamata olives halved
- 1/2 cup feta cheese crumbled
- Fresh parsley chopped (for garnish)
Combine olive oil, lemon juice, oregano, garlic, salt, and pepper in a bowl and add chicken pieces. Toss to coat and marinate for at least 20 minutes.
Heat a grill pan or skillet over medium heat and cook the chicken for 5 to 6 minutes on each side until fully cooked and golden.
Mix Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, dill, salt, and pepper in a bowl. Chill the sauce until serving.
