Equipment

  • 1 grill or griddle preheated to 350-400°F for burgers

Ingredients
  

  • 2 yellow onions sliced or diced
  • 1 tbsp avocado or olive oil
  • Sea salt to taste
  • 1 pound ground beef shaped into 4 patties about 3/4 inch thick
  • 4 slices cheddar cheese omit for dairy-free or Paleo
  • 8 leaves green leaf lettuce washed and dried (or 2 small heads iceberg)
  • 2 tomatoes sliced (about 10 ounces)
  • 4 dill pickles thinly sliced
  • 2 tsp yellow mustard divided
  • 1/4 cup mayonnaise avocado oil mayo recommended
  • 2 tbsp ketchup sugar-free ketchup optional
  • 1 tbsp pickle relish or minced dill pickle for sugar-free
  • 1/2 tsp white wine vinegar
  • Optional: maple syrup or coconut aminos to taste

Instructions
 

  • Heat a large pan over medium heat and add oil.
  • Add sliced onions and cook over medium to medium-low heat, stirring occasionally until caramelized and browned, about 20 to 30 minutes.
  • Season the caramelized onions with sea salt and set aside.
  • Preheat grill or griddle to 350-400°F.
  • Mix secret sauce by combining mayonnaise, ketchup, pickle relish, white wine vinegar, and optional sweetener if desired.
  • Divide yellow mustard evenly and spread thinly over one side of each beef patty.
  • Grill the mustard side of patties down first for 6 to 10 minutes per side, flipping once.
  • Add cheddar cheese slices halfway through cooking if using.
  • Once burgers are cooked to your preferred doneness, serve immediately wrapped in lettuce leaves with caramelized onions, tomato slices, pickles, and secret sauce.

  • Use naturally colored yellow cheddar to avoid artificial dyes.
  • Add maple syrup to secret sauce for extra sweetness if desired.
