Ingredients
  

  • 2 large boneless skinless chicken breasts cut into 1-inch cubes
  • 1 tablespoon olive oil divided
  • 1 tablespoon Cajun seasoning
  • 4 medium russet potatoes peeled and cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream

Instructions
 

  • Preheat oven to 425°F. Lightly grease a 9x13-inch baking dish with oil or nonstick spray.
  • Toss potato cubes with 1 tablespoon olive oil, salt, black pepper, and smoked paprika in a large bowl.
  • Spread the potatoes evenly in the prepared baking dish and roast for 20 minutes, stirring halfway through.
  • Meanwhile, mix chicken cubes with remaining olive oil and Cajun seasoning until evenly coated.
  • Remove potatoes from oven and scatter seasoned chicken over them.
  • Return to oven and bake an additional 20 minutes until chicken is cooked and potatoes are tender.
  • Sprinkle cheddar cheese and crumbled bacon on top, then bake for 3-5 minutes until cheese melts.
  • Remove from oven and immediately top with chopped green onions and dollops of sour cream. Serve hot.

Notes

  • For extra heat, increase Cajun seasoning amount.
  • Can be prepared ahead and baked when needed.
  • Store leftovers in refrigerator for up to 3 days.
