- 2 large boneless skinless chicken breasts cut into 1-inch cubes
- 1 tablespoon olive oil divided
- 1 tablespoon Cajun seasoning
- 4 medium russet potatoes peeled and cut into 1-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon crumbled
- 1/4 cup chopped green onions
- 1/2 cup sour cream
Preheat oven to 425°F. Lightly grease a 9x13-inch baking dish with oil or nonstick spray.
Toss potato cubes with 1 tablespoon olive oil, salt, black pepper, and smoked paprika in a large bowl.
Spread the potatoes evenly in the prepared baking dish and roast for 20 minutes, stirring halfway through.
Meanwhile, mix chicken cubes with remaining olive oil and Cajun seasoning until evenly coated.
Remove potatoes from oven and scatter seasoned chicken over them.
Return to oven and bake an additional 20 minutes until chicken is cooked and potatoes are tender.
Sprinkle cheddar cheese and crumbled bacon on top, then bake for 3-5 minutes until cheese melts.
Remove from oven and immediately top with chopped green onions and dollops of sour cream. Serve hot.
- For extra heat, increase Cajun seasoning amount.
