Ingredients
  

  • 2 tablespoons butter
  • 6 large eggs
  • ½ teaspoon garlic powder
  • teaspoon cayenne pepper
  • Sea salt and black pepper to taste
  • 4 large flour tortillas warmed
  • 2 cups roasted or pan-fried potatoes
  • 1 cup grated cheddar cheese
  • 1 cup cooked breakfast sausage cut into pieces
  • 5 slices bacon cooked and sliced
  • Sour cream for serving
  • Salsa for serving

Instructions
 

  • Melt butter in a skillet over medium heat, then add eggs, garlic powder, cayenne, salt, and pepper; stir and cook until fully set.
  • Lay each warmed tortilla flat and add ½ cup scrambled eggs, ½ cup roasted potatoes, ¼ cup grated cheese, and ¼ cup of either bacon or sausage.
  • Roll each tortilla tightly into a burrito shape.
  • Cook burritos in a skillet with a little butter or oil until golden on both sides, or bake at 350°F (175°C) for 10 minutes.
  • Serve warm with salsa and sour cream.
