Ingredients
  

  • 20 Medjool dates pitted
  • 4 oz goat cheese softened
  • 10 slices bacon cut in half
  • 1 tablespoon honey optional for drizzling
  • Fresh rosemary or thyme optional for garnish

Instructions
 

  • Make a small slit in each Medjool date and remove the pit carefully without splitting the date.
  • Fill each date cavity with softened goat cheese using a small spoon or fingers.
  • Wrap each stuffed date tightly with a half-slice of bacon and place seam-side down on a parchment-lined baking sheet.
  • Bake in a preheated oven at 400°F for 15 to 20 minutes until bacon is crispy and caramelized.
  • Optionally drizzle baked dates with honey and garnish with chopped fresh rosemary or thyme.
  • Allow to cool slightly before serving to let the cheese firm up while remaining creamy.
