Ingredients

For the Cake:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, melted and slightly cooled
3/4 cup granulated sugar
2 large eggs
1 cup sour cream or plain Greek yogurt
2 tsp vanilla extract
3/4 cup strawberry jam (or more if you love it gooey)

For the Streusel Topping:
1/2 cup all-purpose flour
1/3 cup brown sugar
1 tsp ground cinnamon
1/4 cup cold butter, cubed


Instructions

Step 1: Preheat and Prep
Preheat your oven to 350°F. Grease and flour an 8×8 or 9×9 inch square baking pan or line it with parchment for easy removal.

Step 2: Make the Streusel
In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or your fingers until the mixture forms coarse crumbs. Pop it in the fridge while you make the cake.

Step 3: Mix the Batter
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk the melted butter with the sugar, eggs, sour cream, and vanilla until smooth. Pour the wet ingredients into the dry and gently fold until just combined — don’t overmix.

Step 4: Layer It Up
Spread half of the batter into the prepared pan. Dollop the strawberry jam evenly across the surface, then swirl gently with a butter knife. Add the remaining batter on top and smooth it out. Sprinkle the chilled streusel evenly over the top.

Step 5: Bake Until Golden
Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean (a little jam is okay, but no raw batter). Let it cool in the pan for at least 15–20 minutes before slicing.
