Ingredients
3–4 lbs beef roast (chuck or brisket)
1 cup stout beer (preferably Irish stout)
1/2 cup honey
4 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons olive oil
2 large onions, quartered
4 carrots, chopped
3 sprigs fresh thyme (or 1 teaspoon dried thyme)
2 cups beef broth
Instructions
1. Preheat your oven to 325°F (165°C).
2. In a bowl, mix together the stout, honey, minced garlic, soy sauce, Dijon mustard, black pepper, and salt to create a marinade.
3. Place the beef roast in a large resealable bag or a deep dish and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
4. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the marinated beef roast on all sides until browned.
5. Remove the roast and set aside. In the same pot, add onions and carrots; sauté for about 5 minutes until slightly softened.
6. Return the roast to the pot with vegetables. Pour in any remaining marinade and add beef broth. Tuck thyme sprigs around the roast.
7. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
8. Roast for approximately 3-4 hours or until fork-tender, basting occasionally with juices.
9. Once done, let it rest for 15 minutes before slicing.
Notes
This roast pairs well with mashed potatoes or crusty bread to soak up the delicious sauce. Adjust seasoning to taste.
