Description

This creamy Tuscan Chicken Tortellini is a flavorful and comforting dish, combining tender chicken, fresh spinach, sun-dried tomatoes, and cheese-filled tortellini in a rich garlic sauce.


Ingredients

2 cups of cheese tortellini
1 pound of boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1/2 teaspoon Italian seasoning
Salt and pepper to taste
Parmesan cheese for serving


Instructions

1. Cook the tortellini according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper and add them to the skillet.
3. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing.
4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
5. Pour in the heavy cream and bring to a simmer. Stir in the sun-dried tomatoes and Italian seasoning.
6. Add the fresh spinach and cook until wilted.
7. Return the sliced chicken to the skillet along with the cooked tortellini. Toss everything together until well combined and heated through.
8. Serve hot, topped with grated Parmesan cheese.

Notes

This dish can be customized by adding other vegetables like mushrooms or bell peppers. Adjust seasoning according to your taste.
