Description

Indulge in the refreshing taste of these Triple Layer Mint Cookies. With a smooth mint cream layer sandwiched between two delicious chocolate cookies, they are perfect for any mint lover!


Ingredients

For the cookie layers:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract

For the mint cream layer:
1/2 cup unsweetened powdered sugar
2 tablespoons unsweetened cocoa powder
1 tablespoon milk
1 teaspoon peppermint extract


Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
3. In another bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients and mix until combined.
5. Scoop tablespoons of dough onto the prepared baking sheet about 2 inches apart. Flatten slightly.
6. Bake for 10-12 minutes or until set. Let cool completely on a wire rack.
7. For the mint cream layer, mix powdered sugar, cocoa powder, milk, and peppermint extract until smooth.
8. Once cookies are cooled, spread a layer of mint cream on half of the cookies and top with the remaining cookies to form sandwiches.

Notes

You can adjust the level of mint flavor by adding more or less peppermint extract to suit your taste.
