Ingredients
1 (9 oz) package cheese tortellini
1 cup cherry tomatoes, halved
1/2 cup sliced cucumber
1/2 cup sliced black olives
1/2 cup diced red bell pepper
1/4 cup chopped red onion
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil or parsley
For the Dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and pepper to taste
Instructions
Step 1: Cook the Tortellini
Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions until tender. Drain and rinse under cold water to cool.
Step 2: Make the Dressing
In a small bowl, whisk together olive oil, red wine vinegar, Dijon, honey, garlic, oregano, salt, and pepper.
Step 3: Toss It All Together
In a large bowl, combine cooled tortellini, cherry tomatoes, cucumber, olives, bell pepper, red onion, mozzarella, and fresh herbs. Pour dressing over and toss gently to coat.
Step 4: Chill and Serve
