1 bell pepper, diced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 package (32 oz) frozen tater tots
6 large eggs
1/2 cup milk (whole or 2%)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika (optional for extra flavor)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the breakfast sausage over medium heat until browned and fully cooked, breaking it up into small crumbles as it cooks. Once cooked, drain any excess grease and set aside.
  3. In the same skillet, sauté the diced onion and bell pepper for 2-3 minutes until softened.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, and paprika.
  5. Lightly grease a 9×13-inch baking dish. Spread half of the tater tots evenly across the bottom of the dish.
  6. Evenly distribute the cooked sausage, onion, and bell pepper over the tater tots.
  7. Pour the egg mixture over the casserole, making sure everything is evenly coated.
  8. Sprinkle the shredded cheddar and mozzarella cheese on top of the casserole.
  9. Add the remaining tater tots on top of the casserole, pressing them down slightly.
  10. Bake for 35-40 minutes or until the eggs are set, the cheese is melted, and the tater tots are crispy on top.
