Instructions
Grate the sweet potato using a box grater or food processor. Squeeze out any excess moisture using a clean kitchen towel or paper towel. This will help keep the poppers from being too wet.
In a large mixing bowl, combine the grated sweet potato, ground chicken, chopped onion, fresh parsley, coconut flour, garlic powder, onion powder, sea salt, black pepper (if using), and dried thyme. Add lemon juice if you want a zesty kick. Use your hands to mix everything together thoroughly until it’s well combined.
With your hands, shape the mixture into small poppers or meatballs, about 1 to 1 ½ inches in diameter.
Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the sweet potato chicken poppers in batches (don’t overcrowd the pan). Cook each batch for about 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C).
