Ingredients

For the Chicken:
4 boneless skinless chicken breasts
1 tbsp olive oil
Salt + pepper to taste
1 tsp garlic powder
1/2 tsp paprika

For the Creamy Filling:
4 oz cream cheese (softened)
1 cup fresh spinach, chopped
1/3 cup shredded mozzarella or Monterey Jack
1/4 cup grated parmesan
2 cloves garlic, minced
Pinch of red pepper flakes (optional)
Salt + pepper to taste


Instructions

Step 1: Make the Filling
In a bowl, mix together softened cream cheese, chopped spinach, mozzarella, parmesan, minced garlic, red pepper flakes, and a little salt and pepper. Give it a taste — yes, it’s delicious already.

Step 2: Prep the Chicken
Slice a pocket into the side of each chicken breast (don’t cut all the way through!). Season the chicken all over with salt, pepper, garlic powder, and paprika.

Step 3: Stuff It Up
