Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Juice of 2 limes
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, cayenne pepper, salt, and pepper. Mix well to create a marinade.
2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
3. Preheat the grill to medium-high heat.
4. Remove chicken from marinade and discard the leftover marinade.
5. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F or 75°C).
6. Remove from grill and let rest for a few minutes before slicing.
7. Garnish with fresh cilantro before serving.
