For the Chicken & Cooking:

  • 4 boneless skinless chicken breasts

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • 1 can (14 oz) diced tomatoes, undrained

  • 1/2 cup pitted Kalamata olives, halved

  • 1 red onion, sliced

  • 3 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/2 tsp dried thyme

  • Juice of 1 lemon

  • Zest of 1 lemon

For Finishing:

  • Fresh parsley, chopped (for garnish)

  • Feta cheese (optional, for topping)

  • Extra lemon wedges (optional, for serving)


Instructions

Step 1: Prep the Chicken
Season the chicken breasts generously with salt and pepper on both sides. Drizzle the olive oil into the bottom of the slow cooker and add the chicken breasts.

Step 2: Add the Mediterranean Goodness
Top the chicken with the diced tomatoes (with juice), Kalamata olives, red onion, and garlic. Pour the chicken broth over everything and sprinkle the oregano, basil, thyme, and lemon zest over the top. Squeeze the juice of one lemon over the ingredients.
