Use it in salads, tacos, sandwiches, grain bowls—or eat it straight with a fork (we won’t judge).

Ingredients

Scale

23 boneless skinless chicken breasts (about 1.52 lbs)
1/2 cup chicken broth or water
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon dried thyme or Italian seasoning
Salt & pepper to taste
Optional: a squeeze of lemon juice or drizzle of olive oil for extra moisture


Instructions

Step 1: Season Up
Rub the chicken breasts with the spices (and olive oil or lemon if using).

Step 2: Into the Slow Cooker
Place chicken in the slow cooker. Pour in broth or water. Cover.

Step 3: Let It Do Its Thing
Cook on low for 3–4 hours or high for 2–3 hours, until the internal temp hits 165°F. Don’t overcook—chicken dries out if it goes too long.

Step 4: Rest & Serve
Let it rest for 5–10 minutes, then slice, dice, or shred as needed. Spoon a little of the cooking liquid over the top to keep it juicy.

Notes

Toss in BBQ sauce for pulled chicken sandwiches.
Shred and add to rice bowls with salsa and avocado.
Chop into a Caesar salad or wrap.
Serve with roasted veggies and potatoes for a simple dinner plate
