Ingredients

For the Salad:
1 lb shrimp, peeled and deveined
2 teaspoons taco seasoning (store-bought or homemade)
1 tablespoon olive oil
6 cups Romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 cup corn kernels (fresh, frozen, or canned)
1 avocado, sliced
1/4 cup cilantro, chopped
Lime wedges, for garnish

For the Dressing:
1/4 cup sour cream or Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lime juice
1 teaspoon taco seasoning (optional, for extra flavor)
Salt and pepper to taste


Instructions

Step 1: Season the Shrimp
Toss the shrimp in taco seasoning until evenly coated. Heat olive oil in a large skillet over medium heat. Cook the shrimp for 2-3 minutes per side, until pink and opaque. Remove from heat.

Step 2: Assemble the Salad
In a large bowl, combine chopped Romaine lettuce, cherry tomatoes, red onion, corn, avocado slices, and cilantro.

Step 3: Make the Dressing
In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, lime juice, taco seasoning, salt, and pepper until smooth and creamy.

Step 4: Toss and Serve
Drizzle the dressing over the salad and toss gently to combine. Top with the cooked shrimp and lime wedges for extra zest.

Notes
