Ingredients
For the Fajita Base:
- 2 lbs boneless, skinless chicken breasts, sliced into strips
- 3 bell peppers (red, yellow, and green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp fajita seasoning (or homemade)
- Juice of 1 lime
For Homemade Fajita Seasoning (Optional):
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
For the Queso Sauce:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 1 cup chicken broth
- 8 oz cream cheese, cubed and softened
- 2 cups sharp cheddar cheese, shredded
- 1 cup pepper jack cheese, shredded
- 1 can (10 oz) diced tomatoes with green chiles (Rotel), drained
- 1 tsp garlic powder
- 1/2 tsp cumin
- Salt to taste
For Serving:
- Warm flour tortillas
- 1/2 cup sour cream
- 1 cup guacamole or sliced avocado
- 1/2 cup fresh cilantro, chopped
- 2 limes, cut into wedges
- Pickled jalapeños (optional)
- Hot sauce for the brave
- Tortilla chips for scooping
Instructions
Slice chicken breasts into strips and season with fajita seasoning, salt, and pepper.
Let it sit for a few minutes while you prep the veggies.
Heat 1 tbsp olive oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat.
Add seasoned chicken strips and cook for 5-7 minutes until golden brown and cooked through.
Remove chicken to a plate and set aside.

Add the cooked chicken back to the skillet along with any juices.
Toss everything together until the chicken and veggies are coated in that gorgeous queso sauce.
Squeeze fresh lime juice over everything and give it a final toss.
Let it simmer for 2-3 minutes to heat through.
Top with fresh cilantro and serve straight from the skillet.
