It’s basically what happens when Oreos and ice cream fall in love and never look back. These no-bake Oreo ice-cream sandwiches are the frozen treat you didn’t know you needed—layers of crushed Oreos, creamy vanilla ice cream, and more Oreos, all pressed together into an easy, sliceable slab of joy. Think icebox cake meets cookies and cream heaven. Perfect for summer parties, birthdays, or midnight snacking straight from the freezer.
Instructions
Make the Oreo base.
Line a 9×13-inch baking dish with parchment paper. Crush 24 Oreos in a food processor (or smash in a zip-top bag with a rolling pin). Stir in melted butter and press this mixture firmly into the bottom of the pan to form a crust. Freeze for 10 minutes.Add the ice cream layer.
Spread softened vanilla ice cream evenly over the crust. You can swirl in chocolate chips, fudge, or caramel here if you’re feeling fancy.Top with more crushed Oreos.
Roughly crush the remaining Oreos and sprinkle over the top, pressing them gently into the ice cream.Freeze until solid.
Cover tightly with foil or plastic wrap and freeze for at least 4 hours (overnight is even better) until fully set.Slice and serve.
Lift out the whole slab using the parchment, then cut into bars or squares. Try not to eat them all in one go.
Notes
• Serve straight up or drizzle with hot fudge for drama
• Sandwich between two whole Oreos for a handheld version
• Add a scoop of peanut butter or Nutella inside for a surprise layer
• Roll the edges in mini chocolate chips or sprinkles for extra crunch
