2 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¾ cup unsalted butter, melted and slightly cooled
1 ¼ cups packed brown sugar
½ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup white chocolate chips
½ cup milk chocolate chips or chunks (optional)
½ cup chopped walnuts or pecans (optional)


Instructions

Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, stir melted butter, brown sugar, and granulated sugar until well combined.
Add eggs and vanilla extract to the wet ingredients. Mix until smooth and thick.
Fold in the dry ingredients just until combined. Do not over-mix.
Stir in white chocolate chips, and any optional mix-ins like nuts or milk chocolate chunks.
Spread batter evenly in the prepared pan and smooth the top.
Bake for 28–32 minutes, or until edges are golden and the center is just set.
Cool completely in the pan on a wire rack before slicing

Notes

For extra gooeyness, underbake slightly and let them finish setting as they cool.
You can switch up the chocolate mix-ins to suit your taste — dark chocolate chunks, caramel bits, or butterscotch chips all work great.
These bars freeze beautifully. Wrap tightly and store for up to 2 months.
