Description
This One Pot Taco Spaghetti is a delicious and easy weeknight meal that combines the flavors of tacos with spaghetti, all cooked in one pot for minimal cleanup!
Ingredients
12 oz spaghetti
1 lb ground beef (or turkey)
1 onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (14.5 oz) diced tomatoes with green chilies
3 cups beef broth
1 cup corn (frozen or canned)
1 cup black beans (canned, drained and rinsed)
1 cup shredded cheese (cheddar or Mexican blend)
Salt and pepper to taste
Chopped cilantro for garnish
Instructions
1. In a large pot over medium heat, brown the ground beef with the diced onion and minced garlic until fully cooked. Drain excess fat if necessary.
2. Stir in the taco seasoning and cook for another minute until fragrant.
3. Add the diced tomatoes, beef broth, corn, black beans, and spaghetti to the pot. Stir well to combine.
4. Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until the spaghetti is cooked al dente and most of the liquid is absorbed.
5. Stir in the shredded cheese until melted and creamy.
6. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.
Notes
This dish is versatile! Feel free to add bell peppers or jalapeños for extra flavor. You can also substitute ground meat for a plant-based option.
