Description
Spicy. Creamy. Dreamy. This one-pot wonder is where Korean heat meets Italian comfort — a creamy gochujang alfredo sauce hugs every strand of pasta like it was born to. It’s bold, it’s a little fiery, and it’s ridiculously easy to make. Seriously, you toss a few pantry staples in one pot, and boom — dinner’s ready before your favorite show even loads. It’s the kind of meal that makes you feel like a spicy pasta wizard (yes, that’s a thing now).
Ingredients
2 tablespoons butter (or olive oil if you’re trying to behave)4 garlic cloves, minced1 shallot, finely chopped2 tablespoons gochujang (Korean chili paste — find it at most grocery stores or online)2 cups chicken or veggie broth1 cup heavy cream8 oz fettuccine or linguine½ cup grated parmesan cheeseJuice of half a lemonSalt and pepper to tasteOptional toppings: chopped basil, green onions, or more parmesan
Instructions
Step 1: Sauté the aromatics
In a large deep skillet or pot, melt 2 tablespoons of butter over medium heat. Add the minced garlic and chopped shallot. Sauté for 1–2 minutes until everything’s softened and your kitchen smells amazing.
Step 2: Bring the heat
Add 2 tablespoons of gochujang to the pot. Stir it in with the garlic and shallot, letting it cook for about a minute to wake up all those spicy, smoky flavors.
Step 3: Make it saucy
Pour in the broth and heavy cream. Stir to combine, then bring the whole thing to a gentle simmer. Don’t walk away yet — it’s about to get good.
Step 4: Drop the pasta
Add your fettuccine or linguine right into the pot (uncooked). Stir well to make sure the noodles don’t clump together and that they’re all taking a dip in the spicy cream bath.
Step 5: Simmer & stir
Let the pasta cook for about 10–12 minutes, stirring often so nothing sticks. If the sauce gets too thick before the pasta is tender, just splash in more broth or water. You’re the boss.
Step 6: Get cheesy
Once the pasta’s perfectly cooked and the sauce is creamy and luscious, stir in the parmesan cheese until melted and glossy. This is the moment everything becomes magical.
Step 7: Brighten it up
Squeeze in that lemon juice to cut through the richness and balance the spice. Taste it. Need more salt? More cheese? More lemon? Fix it up, chef.
Step 8: Serve and slay
Spoon into bowls, top with fresh basil, green onions, or extra parm, and prepare for silence — because everyone will be too busy eating.
Notes
Add protein — grilled chicken, shrimp, or tofu play super nice with this sauce.Go full veg — throw in mushrooms, spinach, or roasted red peppers.Want it spicier? Add a little sriracha or crushed red pepper at the end.Need it lighter? Swap the cream for half-and-half or coconut milk (different vibe, still delicious).
