Ingredients
– 1 tablespoon olive oil
– 1 small onion, diced
– 2–3 cloves garlic, minced
– 1 pound ground beef (lean is best)
– Salt and pepper, to taste
– 1 tablespoon tomato paste
– 1 teaspoon Italian seasoning
– 2 cups beef broth
– 1 (15 oz) can tomato sauce
– 2 cups uncooked medium pasta shells
– 1/2 cup heavy cream (or whole milk for lighter version)
– 2 cups shredded sharp cheddar cheese
– Optional: parsley or basil for garnish
Instructions
Step 1: Sizzle Time
Heat the olive oil in a large skillet or deep saucepan over medium heat. Add diced onion and cook until soft (about 3–4 minutes). Stir in garlic and cook for another 30 seconds until fragrant.
Step 2: Beef It Up
Add the ground beef, breaking it up with a spoon. Season with salt and pepper. Cook until browned and no longer pink. Drain any excess grease if needed.
Step 3: Sauce It Up
Stir in the tomato paste and Italian seasoning. Let it cook for about 1 minute to deepen the flavor. Add the beef broth and tomato sauce, then stir in the pasta shells.
Step 4: Simmer and Chill (Not Really)
Bring it to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 12–15 minutes, stirring occasionally, until the pasta is tender and the liquid has mostly absorbed.
Step 5: Make It Cheesy
Stir in the heavy cream and shredded cheddar. Keep stirring until everything is melty and creamy and amazing. Taste and adjust seasoning if needed.
Step 6: Garnish and Serve
Sprinkle with chopped parsley or basil if you’re feeling fancy. Serve hot and bask in your one-pot dinner success.
