12 slices white or brioche bread (soft, not too thick)
6 slices deli ham (thinly sliced)
1 cup shredded Gruyère or Swiss cheese
2 tablespoons butter (for toasting)

For the béchamel:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1/4 teaspoon ground nutmeg
Salt and pepper to taste


Instructions

Step 1: Make the béchamel
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly pour in the milk, whisking constantly until smooth and thickened, about 3–5 minutes. Season with nutmeg, salt, and pepper. Set aside to cool slightly.

Step 2: Assemble the sandwiches
Trim the crusts off the bread if you want a cleaner look. Spread a thin layer of béchamel on one side of half the slices. Top with a bit of ham and cheese. Add the second slice of bread on top and gently press down. Cut each sandwich into quarters to create bite-sized pieces.

Step 3: Toast to perfection
Heat a large skillet over medium heat and melt a bit of butter. Toast the mini sandwiches until golden brown and crispy on both sides, about 2–3 minutes per side. Work in batches if needed.

Step 4: Finish in the oven (optional but worth it)
Preheat the oven to 375°F (190°C). Place the toasted bites on a baking sheet, top each with a pinch of cheese and a dot of béchamel. Bake for 5–7 minutes until bubbly and browned on top.
