Ingredients
For the Meatballs:
1 pound ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
For the Orzo:
1 cup orzo pasta
2 cups chicken broth
1 cup heavy cream
1 cup spinach, chopped
1/2 cup sun-dried tomatoes, chopped
Fresh basil for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined and form into meatballs (about 1 inch in diameter).
3. Place meatballs on a baking sheet and bake for 20 minutes or until cooked through.
4. While meatballs are baking, in a large saucepan over medium heat, bring chicken broth to a boil. Add orzo and cook according to package instructions.
5. Once orzo is cooked, reduce heat to low and stir in heavy cream, spinach, and sun-dried tomatoes.
6. Add baked meatballs to the orzo mixture and gently mix until everything is combined.
7. Serve hot, garnished with fresh basil.
