Ingredients
For the Cobbler:
1/2 cup unsalted butter (1 stick)
1 cup all-purpose flour
1 cup granulated sugar
1 1/2 tsp baking powder
1/4 tsp salt
1 cup milk (whole milk preferred)
2 tbsp lemon zest (about 2 lemons)
For the Magic Sauce:
1 cup granulated sugar
1/2 cup fresh lemon juice (about 2–3 lemons)
1 cup hot water
Instructions
Step 1: Melt the Butter
Preheat your oven to 350°F (175°C).
Place the stick of butter in a 9×13-inch baking dish and pop it into the oven until fully melted. Keep an eye on it — you want it melted, not browned.
Step 2: Make the Batter
In a bowl, whisk together the flour, sugar, baking powder, salt, milk, and lemon zest until smooth.
Pour the batter evenly over the melted butter. (DO NOT STIR! Trust the process.)
Step 3: Mix the Magic Sauce
In a separate bowl, stir together the sugar, lemon juice, and hot water until the sugar is mostly dissolved.
Carefully pour this mixture over the batter in the baking dish. (Again — DO NOT STIR.)
Step 4: Bake the Magic
Bake for 40–45 minutes or until the top is golden and puffy.
You’ll see a beautiful cake layer on top and a saucy lemon layer underneath — pure magic.
Step 5: Serve It Up
Scoop out generous portions while warm, making sure to get some of that gooey lemon sauce from the bottom.
Top with ice cream or whipped cream if you’re feeling fancy (you are).
