  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • ½ tsp xanthan gum (for elasticity)
  • ¼ tsp salt
  • 2 tbsp granulated keto sweetener (like erythritol or monk fruit)
  • 2 eggs
  • ½ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • ½ tsp cinnamon (optional)
  • Avocado oil or coconut oil (for frying)

Topping Options

  • Powdered keto sweetener (for dusting)
  • Sugar-free chocolate syrup
  • Whipped cream
  • Cinnamon and erythritol blend

Instructions

1. Prepare the Batter
In a mixing bowl, whisk together almond flour, coconut flour, baking powder, xanthan gum, salt, and sweetener. In another bowl, beat the eggs, then add almond milk, vanilla extract, and melted butter. Gradually mix the wet ingredients into the dry ingredients until a smooth batter forms. Let it rest for five minutes to thicken slightly.

2. Heat the Oil
Pour about one to two inches of avocado oil or coconut oil into a deep pan. Heat to 350°F (175°C).

3. Pipe the Funnel Cake
Transfer the batter into a piping bag or ziplock bag with a small tip cut off. Squeeze the batter in a circular, swirling motion directly into the hot oil. Fry for one to two minutes per side, flipping once, until golden brown.

4. Drain and Dust
Remove from the oil and place on a paper towel-lined plate to drain excess oil. Immediately dust with powdered keto sweetener or your favorite toppings.

5. Serve and Enjoy
Best served warm with sugar-free syrup, whipped cream, or a cinnamon-sweetener mix.

Notes

  • No xanthan gum? Use ½ teaspoon psyllium husk powder.
  • No piping bag? Use a spoon and drizzle the batter carefully.
  • For extra crispiness, fry in small batches and avoid overcrowding.
  • Make it chocolatey by adding one tablespoon of unsweetened cocoa powder to the batter.
