Ingredients
4 bone-in pork chops (about 1 inch thick)
Salt and black pepper to taste
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon smoked paprika
For the Spicy Peach Glaze
1 cup peach preserves or jam
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon soy sauce
¼–½ teaspoon red pepper flakes (adjust to taste)
1 teaspoon grated fresh ginger (optional for extra kick)
Instructions
Preheat grill to medium-high heat (about 400°F/200°C)
Pat pork chops dry with paper towels. Brush with olive oil, then season both sides with salt, pepper, garlic powder, and smoked paprika
In a small saucepan, combine peach preserves, mustard, vinegar, soy sauce, red pepper flakes, and ginger. Heat over medium until bubbling, about 3–5 minutes, stirring often. Set aside
Grill pork chops for 4–6 minutes per side or until internal temp reaches 145°F (63°C). Brush glaze on both sides during the last 1–2 minutes of grilling
Let chops rest for 5 minutes before serving. Spoon extra glaze over top

Grill Marks Tip: Avoid flipping too often—one good flip gives the best sear
