This hearty Irish-inspired dish combines crispy hash browns with flavorful cabbage and sharp Irish cheddar cheese, creating a comforting one-pan meal perfect for breakfast or brunch.
Ingredients
2 cups grated potatoes (about 2 large potatoes)
1 cup shredded green cabbage
1 cup grated Irish cheddar cheese
1 small onion, diced
2 tablespoons olive oil
2 large eggs
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. Start by grating the potatoes. Place them in a clean kitchen towel and squeeze out excess moisture.
2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
3. Add the grated potatoes and shredded cabbage to the skillet. Press them down into an even layer and cook for about 5-7 minutes until the bottom is golden brown.
4. Carefully flip the hash brown mixture over (you can do this in sections) and cook for another 5-7 minutes until golden on the other side.
5. Sprinkle the grated Irish cheddar over the top and create two wells in the mixture; crack an egg into each well.
6. Cover the skillet with a lid and cook for an additional 5 minutes, or until the eggs are cooked to your liking.
7. Season with salt, pepper, and garnish with fresh parsley before serving.

This dish is versatile; feel free to add cooked bacon or sausage for extra protein or swap in different vegetables based on your preference.
